
Dr. Anna Arthur is an Assistant Professor and Sylvia D. Stroup Scholar of Nutrition and Cancer within the Food Science and Human Nutrition Department at the University of Illinois. She is also Director of Oncology Nutrition Services at Carle Cancer Center in Urbana, IL. Dr. Arthur’s research focuses on the role of diet and nutritional status in determining molecular and clinical outcomes after a cancer diagnosis, with a special emphasis in head and neck cancers. Her lab utilizes both observational and behavioral intervention study designs to elucidate the complex relationships among diet and nutritional status, cancer progression and prognosis, quality of life and cancer-related biomarkers. The long-term goal of this research is to inform the development of new medical nutrition therapies and recommendations for cancer patients and survivors, ultimately improving survival and quality of life after cancer diagnosis. Dr. Arthur attended graduate school at the University of Michigan School of Public Health where she earned a Ph.D. in Nutritional Epidemiology and an M.P.H in Nutrition and Dietetics. She also completed an NCI-funded postdoctoral fellowship with the Cancer Prevention and Control Training Program at the University of Alabama at Birmingham.
