Recent Advances in Sustainable Diets and Nutrition

About This Webinar:

This webinar reviews the latest research on the environmental impacts of individual food choices in the United States, how these choices are associated with the nutritional quality of diets, and how changes in diet can influence these outcomes. The research is based on interdisciplinary work bridging the fields of environmental science, nutrition, and public health, and draws on analyses of 24-hour recall data from the National Health and Nutrition Examination Survey. 

Learning objectives:

  1. Identify three ways in which human food systems can impact the environment.
  2. Explain what is meant by the carbon footprint of a diet.
  3. Describe the relationship between individual dietary choices, diet quality, and environmental impacts in the US context. 

Presenter

Diego Rose is a professor and director of nutrition at Tulane University’s School of Public Health and Tropical Medicine. His current research examines the environmental and health consequences of individual self-selected diets in the US and the effects of simulated dietary changes on these outcomes.
Dr. Rose completed his dietetics training (RD) at the University of California at Berkeley and holds degrees from Berkeley in nutritional sciences (BS), public health nutrition (MPH), and agricultural economics (PhD).
