What are phytonutrients/phytochemicals? How are they beneficial? How does inflammation play a role in the progression of heart disease? We all know diet has a significant impact on the development of cardiovascular disease. This webinar will explore plant food components, bioactive phytonutrients, with health benefits and their effect on the prevention of cardiovascular disease.
Learning objectives:
- The participant will be able to explain the state of the art of the science behind the effect of bioactive compounds in plant foods related to cardiovascular disease.
- The participant will be able to discuss the potential of fruit and vegetable flavonoids on heart health implications and their capacity to protect against chronic diseases.
- The participant will be able to identify the sources of bioactive compounds in the diet and educate clients/patients in selecting foods to reduce their risk of cardiovascular disease.

Dr. Elvira de Mejia
Dr. Elvira de Mejia has a B.S. degree in Biochemical Engineering from the National Polytechnic Institute (Mexico), M.S. degree in Food Science and Technology from the University of California, Davis, and Ph.D. in Plant Biotechnology from the National Polytechnic Institute (Mexico). Dr. de Mejia joined the University of Illinois faculty in 2002. Dr. de Mejia has published over 110 peer-reviewed publications, over 100 scientific presentations on the areas of Food Science, Food Toxicology, and Chemoprevention at different national and international scientific meetings.
