Food and Nutrition Before, During and After Disasters

About This Webinar:
Obtaining safe food before, during, and after disasters or hazards, such as a hurricane or a pandemic, is a necessity for survival.
In this webinar, the Defense Commissary Agency shares what they do to keep our food safe and what you should be shopping for before disasters hit. Extension faculty from the University of Florida share first-hand accounts of helping communities and individuals procure and prepare safe, healthy foods during and after a disaster.
Registered dietitians and nutritionists, as well as Extension educators, will find this webinar most helpful as they work locally with military families.
Learning Objectives
Participants will be able to:
1. Determine healthy meal preparation practices during a disaster, including special diet considerations.
2. Identify safe food practices for before, during, and after a disaster.
3. Describe the safe handling of drinking water before, during, and after a disaster.
4. State the mission of the DeCA’s Public Health Team.
5. Explain what the DeCA Public Health Team does to assist our stores during emergencies/ disasters.
6. Describe how DeCA’s Public Health Team assistance to the stores affects our patrons during emergencies/ disasters.

Kendra Zamojski is a Regional Specialized Agent in Family and Consumer Sciences for the University of Florida IFAS Extension. Kendra provides leadership to district programs in the Northwest District. Kendra earned her bachelor’s degree in Family Studies and her master’s degree in Education from Western Michigan University. She has over 20 years of experience as a Family and Consumer Sciences Agent providing education in health and wellness. Kendra coordinated district-wide Extension educational, response, and recovery efforts following Hurricane Michael in 2018.
LuAnn Duncan, MS

University of Florida IFAS Extension, Sumter County
Ms. Duncan has 27 years of experience working with Extension in two states. Her educational programs focus on health and wellness, food systems, housing, financial management, and human development. Her Bachelor’s and Master’s degrees are from the Ohio State University and she is completing her certification to be an Accredited Financial Counselor (AFC). LuAnn is the Master Trainer Select for the CDC Diabetes Prevention Program for UF IFAS Extension. As part of the Extension duties in her county, she is an employee of Sumter County Emergency Operations and her office manages one of the local emergency shelters.
Richard C. Stith, Jr. MS, CFSM
DeCA-SOHF
Chief, Public Health Division
Mr. Stith is the Chief, Public Health Division at the Defense Commissary Agency within the Directorate of Public Health and Safety. He serves as the principal food safety advisor for all 238 commissaries located worldwide. He has over twenty-four years of prior active duty military service with the U.S. Army’s Veterinary Corps, retiring as a Chief Warrant Officer Four. He has served in various echelons of the military and has a varied assignment history from combat to DoD agency-level support. His previous experience with commissary operations was through installation support in the Great Plains Region as well as OCONUS in Europe and Japan.
Kirsten O’Nell, MS
Health & Wellness Coordinator
Defense Commissary Agency
Ms. O’Nell is the Health and Wellness Coordinator with the Defense Commissary Agency (DeCA). She has an MS in Human Resource Development, from Drexel University, which focuses on using small interventions to improve performance, something she currently uses to assist the Commissary’s Health and Wellness program. Her career goal is to work in policy and advocacy for underserved communities. She is currently pursuing a Ph.D. in Public Policy and Administration from Virginia Commonwealth University.
